Zespri® SunGold Yellow Flesh Kiwifruit asked me to try out some of their #breakfastbling recipes. I have got into a bit of a rut lately with breakfast. It’s usually cereal with milk, a banana and a yoghurt. That suits me most of the time, but it’s good to mix things up a little now and again.
So this morning I decided to make the most of the delicious kiwi fruits that Zespri sent me and try out something more exciting. The fruits deserve something a bit special as they are a little bit different to the norm. Zespri® SunGold is a new juicy, golden-fleshed variety with a refreshing sweet taste and just a hint of sour. Being slightly larger than the average kiwifruit, you get more fruit for each one you peel. Zespri® SunGold is a great source of vitamin C, dietary fibre, folate and other minerals and antioxidants, making it one of the most nutrient-dense fruits available, in fact it contains three times the amount of vitamin C found in oranges. This is what I made:
Zespri® SunGold Kiwifruit, Granola and Coconut Breakfast Pot
Preparation time: 5 minutes
• 2 Zespri® SunGold kiwifruit, peeled and roughly chopped
• 30g granola or sugar-free muesli
• 1 pot of coconut yogurt
• Coconut flakes to decorate
1. Place the Zespri® SunGold kiwifruit in a blender and
process until smooth.
2. Place the granola in a glass, spoon over the yogurt,
top with the Zespri® SunGold kiwifruit and decorate with
toasted coconut (or chopped dried apricots).
