We often think of ready meals as not being very good meals: not very healthy, not made with the best ingredients, essentially a compromise. It doesn’t, and shouldn’t, have to be that way though. I found out earlier in the year when we worked with Goodlife that they have a great range of products packed full of healthy things. This time Goodlife sent two products from their new ready meal range to try out.
First up was the 3 Bean Chilli With Cauliflower Rice. It’s a tasty vegetarian chilli served up with a portion of cauliflower rice (this is chopped up cauliflower which gives the texture of rice without all the carbs). Ready in just 8 minutes if you use the microwave or 18 minutes in a preheated oven, this convenient vegetarian meal is a tasty and easy way to enjoy a low-fat, high protein, gluten-free meal, containing 3 of your 5-a-day. I love that it contains so many vegetables as when you are busy it is difficult to eat healthily and even 5 a day can seem difficult. This is a great one for those days when we trying to go meat-free (we try to do a few days a week). As this dish is high protein, it does help keep you fuller longer and I liked the mix of red and white kidney beans, pinto beans and sweetcorn in a spicy tomato chilli sauce.
Vegetable Masala with Cauliflower Rice was the other dish we tried. Like the 3 Bean Chilli it’s been developed to help you enjoy a low in saturated fat, gluten-free meal, containing 3 of your 5-a-day, ready to go from freezer to table eight minutes. Again it comes served with a portion of cauliflower rice, which really does feel like you are eating normal rice in many ways. Again this is a protein rich dish with its combination of sweet potato and red peppers in a light, fragrant curry sauce made from coconut milk, tomatoes and a delicate blend of Indian spices.
