Making smoothies is a great way to get some more fruit and veg into your diet, but I’d not really considered using peppers as an ingredient before. Looking back I don’t know why, as they are sweet to eat and brightly coloured, so they are perfect for smoothies. Add to that the fact that they contain more vitamin C than oranges, kiwi fruit and strawberries (I was surprised to read that), plus the other vitamins they contain like E, B1, B2 and A, and you soon find that you have a really healthy and versatile ingredient to pop into your breakfast (or any time of day) smoothie.
I tried out a new recipe with some orange peppers to create an orange vitamin hit which will really set you up for the day. I used: 2 stalks of celery, 2 large carrots, 2 apples and 2 orange bell peppers, plus the juice of a lemon. Most of these ingredients don’t need a great deal of preparation. I just cut off the carrot tops, removed the apple cores and cut the peppers into large pieces to remove the seeds inside.
Popping these ingredients into the juicer creates an almost neon orange drink, thanks to the bright colours of the peppers and the carrots. It’s quite sweet though as you have the carrots, apples and peppers in there, but it isn’t too much because the lemon juice cuts through and the celery adds a more neutral flavour. Having drunk my smoothie I feel very virtuous and I know that I have given my body a lot of the vitamins that it needs to carry out its daily work.
